  • 15 ml apple cider vinegar
  • 0.5 tsp black pepper
  • 3 celery stalks
  • 30 ml Dijon mustard
  • 15 g fresh parsley
  • 120 ml mayonnaise
  • 1 red onion
  • 1 tsp salt
  • 3 large sweet potatoes

Directions

Step 1
Peel and cube the sweet potatoes.
Step 2
Boil the sweet potatoes in salted water until tender, about 15 minutes. Drain and let cool.
Step 3
In a large bowl, combine the cooled sweet potatoes, red onion, and celery.
Step 4
In a separate bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.

Pour the dressing over the sweet potato mixture and toss to coat evenly.
