These crispy mashed potato pancakes are a delicious way to use up leftover mashed potatoes. Perfect for a savory breakfast or a tasty side dish, they are golden and crispy on the outside and creamy on the inside.

  • 50 g all-purpose flour
  • 0.5 tsp black pepper
  • 50 g cheddar cheese
  • 1 egg
  • 2 green onions
  • 500 g mashed potatoes
  • 1 tsp salt
  • 3 tbsp vegetable oil

Directions

Step 1
In a large bowl, combine the mashed potatoes, flour, egg, green onions, cheddar cheese, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Step 2
Heat the vegetable oil in a large skillet over medium heat.
Step 3
Scoop about 1/4 cup of the potato mixture and form it into a patty. Place it in the hot skillet. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
Step 4
Cook the pancakes for about 3-4 minutes on each side, or until they are golden brown and crispy.
Step 5
Transfer the cooked pancakes to a paper towel-lined plate to drain any excess oil.
Step 6
Serve hot, garnished with additional green onions or sour cream if desired.
