  • 4 pieces chicken breasts
  • 0.5 cup cilantro
  • 400 ml coconut milk
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 2 tablespoons curry powder
  • 3 cloves garlic
  • 1 tablespoon ginger
  • 1 onion
  • 1 teaspoon salt
  • 2 tablespoons tomato paste
  • 2 tablespoons vegetable oil

Directions

Step 1
Heat the vegetable oil in a pan over medium heat.
Step 2
Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.

Stir in the curry powder, ground cumin, and ground coriander. Cook for another minute.

Transfer the mixture to the slow cooker.

Add the chicken breasts, coconut milk, tomato paste, salt, and black pepper to the slow cooker.

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.

Remove the chicken breasts, shred them with two forks, and return them to the slow cooker.

Stir well and cook for an additional 30 minutes on low.

Serve hot, garnished with fresh cilantro.
