  • 300 g all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 100 g brown sugar
  • 1 egg
  • 200 g granulated sugar
  • 2 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 1 tsp ground ginger
  • 0.5 tsp ground nutmeg
  • 180 g pumpkin puree
  • 0.5 tsp salt
  • 170 g unsalted butter
  • 1 tsp vanilla extract

Directions

Step 1
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.

In a large bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy.

Add the pumpkin puree, egg, and vanilla extract to the butter mixture, and beat until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Drop the dough by rounded tablespoons onto the prepared baking sheets, spacing them about 2 inches apart.

Bake in the preheated oven for 12-15 minutes, or until the edges are lightly browned.
