  • 1 tablespoon celery seed
  • 10 cucumbers
  • 2 green bell peppers
  • 1 tablespoon ground turmeric
  • 1.5 pounds ice
  • 2 tablespoons mustard seed
  • 5 onions
  • 2 red bell peppers
  • 0.5 cup salt
  • 5 cups sugar
  • 6 cups white vinegar

Directions

Step 1
Thinly slice the cucumbers, onions, and bell peppers.
Step 2
In a large bowl, combine the sliced vegetables with the salt and mix well.
Step 3
Cover the mixture with ice and let it sit for 3 hours.
Step 4
Drain the vegetables and rinse them thoroughly to remove the salt.
Step 5
In a large pot, combine the vinegar, sugar, mustard seed, celery seed, and turmeric. Bring to a boil.
Step 6
Add the drained vegetables to the pot and return to a boil.
Step 7
Remove from heat and let the mixture cool slightly.
Step 8
Pack the pickles into sterilized jars, making sure the vegetables are covered with the brine.
Step 9
Seal the jars and refrigerate for at least 24 hours before serving.
