Heat the olive oil in a large pot over medium heat.

Add the flour and cook, stirring constantly, until it turns a dark brown color to form a roux.

Add the chopped onion, bell pepper, celery, and garlic. Cook until the vegetables are tender.

Add the chicken thighs and sausage to the pot, cooking until the chicken is no longer pink.

Pour in the chicken broth and diced tomatoes. Add the bay leaves, black pepper, thyme, and cayenne pepper.
