  • 100 grams apples
  • 2 teaspoons baking soda
  • 300 grams carrots
  • 75 grams coconut
  • 3 eggs
  • 2 teaspoons ground cinnamon
  • 100 grams raisins
  • 0.5 teaspoons salt
  • 200 grams sugar
  • 2 teaspoons vanilla extract
  • 180 milliliters vegetable oil
  • 50 grams walnuts

Directions

Step 1
Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
Step 2
In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.

Stir in the carrots, coconut, raisins, walnuts, and grated apple.
