Ingredients

  • 450 g blue crab meat
  • 60 g butter
  • 1 stalk celery
  • 1 cup cooked rice
  • 60 ml dry sherry
  • 60 g flour
  • 480 ml half-and-half
  • 480 ml milk
  • 0.5 tsp nutmeg
  • 1 onion
  • 0.5 tsp paprika
  • 1 tsp salt
  • 0.5 tsp white pepper

Directions

Step 1
Melt butter in a large pot over medium heat.
Step 2
Add the chopped onion and celery, and cook until softened.
Step 3
Stir in the flour to create a roux, cooking for about 2 minutes.
Step 4
Gradually whisk in the milk and half-and-half until smooth.
Step 5
Add the blue crab meat, dry sherry, salt, white pepper, paprika, and nutmeg. Stir well.
Step 6
Bring the mixture to a simmer and cook for about 15 minutes, stirring occasionally.
Step 7
Add the cooked rice and stir to combine.
Step 8
Serve hot, garnished with additional paprika if desired.
