These easy chicken croquettes are a perfect way to use up leftover chicken. Crispy on the outside and tender on the inside, they make a great appetizer or main dish.

In a large skillet, melt butter over medium heat.

Add the chopped onion and cook until translucent, about 5 minutes.

Stir in the flour and cook for 1 minute.

Gradually add milk, stirring constantly until the mixture thickens.

Add the chopped chicken, 1/2 cup of bread crumbs, salt, and pepper. Mix well.

Remove from heat and let the mixture cool.

Shape the chicken mixture into small patties or croquettes.

Dip each croquette into the beaten egg, then coat with the remaining bread crumbs.

In a large skillet, heat vegetable oil over medium-high heat.
