  • 200 g all-purpose flour
  • 600 g blackberries
  • 30 g cornstarch
  • 1 egg
  • 60 ml ice water
  • 15 ml lemon juice
  • 1 pinch salt
  • 150 g sugar
  • 115 g unsalted butter

Directions

Step 1
Preheat the oven to 190°C (375°F).
Step 2
In a large bowl, mix the flour, sugar, and salt.
Step 3
Add the cold butter pieces into the flour mixture and mix until it resembles coarse crumbs.
Step 4
Gradually add ice water and mix until the dough comes together.
Step 5
Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

In another bowl, combine the blackberries, sugar, cornstarch, and lemon juice. Mix well.
Step 7
Roll out one disc of dough on a floured surface and fit it into a 9-inch pie dish.

Fill the pie crust with the blackberry mixture.

Roll out the second disc of dough and place it over the filling. Trim and crimp the edges to seal.

Brush the top crust with the beaten egg.

Cut small slits in the top crust for steam to escape.
