Sous Vide Egg Bites

Delicious and fluffy egg bites cooked to perfection using the sous vide method. Perfect for a quick breakfast or snack on-the-go.

Ingredients

  • 60 g bacon
  • 60 g bell pepper
  • 120 g cottage cheese
  • 6 large eggs
  • 0.5 tsp pepper
  • 1 tsp salt
  • 120 g shredded cheese
  • 60 g spinach

Directions

Step 1
Preheat your sous vide water bath to 172°F (78°C).
Step 2
In a blender, combine the eggs, cottage cheese, shredded cheese, salt, and pepper. Blend until smooth.
Step 3
Stir in the chopped bacon, spinach, and bell pepper.
Step 4
Pour the mixture into silicone molds or small mason jars, filling each about 75% full.
Step 5
Place the molds or jars into the preheated sous vide water bath and cook for 60 minutes.
Step 6
After cooking, remove the egg bites from the water bath and let them cool slightly before removing from the molds or jars.
Step 7
Serve immediately or store in the refrigerator for up to 5 days. Reheat before serving if desired.
