A tangy and slightly sweet relish made from green tomatoes, perfect as a condiment for sandwiches, burgers, or grilled meats.
Directions
Step 1
Chop the green tomatoes, onions, red bell peppers, and green bell peppers into small pieces.
Step 2
Place the chopped vegetables in a large bowl and sprinkle with salt. Let it sit for about 4 hours.

Drain the vegetables and rinse them under cold water. Drain well again.
Step 4
In a large pot, combine the vinegar, sugar, mustard seeds, and celery seeds. Bring to a boil.

Add the drained vegetables to the pot and return to a boil. Reduce heat and simmer for 30 minutes, stirring occasionally.
Step 6
Ladle the relish into sterilized jars, leaving 1 cm of headspace. Seal the jars and process in a boiling water bath for 10 minutes.
Step 7
Allow the jars to cool completely before storing in a cool, dark place. Let the relish sit for at least a week before using to allow the flavors to meld.
