  • 1 bay leaf
  • 0.5 tsp black pepper
  • 3 carrots
  • 2 celery stalks
  • 2 chicken breasts
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 2 cups egg noodles
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 0.5 cup parsley
  • 1 tsp salt

Directions

Step 1
Set the Instant Pot to sauté mode and heat the olive oil.
Step 2
Add the diced onion and minced garlic, sauté until fragrant.
Step 3
Add the sliced carrots and celery, and cook for a few more minutes.
Step 4
Pour in the chicken broth, and add salt, pepper, thyme, and the bay leaf.
Step 5
Place the chicken breasts into the pot.
Step 6
Close the lid and set the Instant Pot to high pressure for 10 minutes.
Step 7
Once the cooking time is up, perform a quick release.
Step 8
Remove the chicken breasts, shred them, and return to the pot.
Step 9
Add the egg noodles and set the Instant Pot to sauté mode. Cook until noodles are tender.
Step 10
Stir in the chopped parsley before serving.
