  • 2 tbsp apple cider vinegar
  • 3 bay leaves
  • 1 cup beef broth
  • 1.5 kg beef chuck roast
  • 1 tsp black pepper
  • 3 chipotle peppers in adobo sauce
  • 1 tsp dried oregano
  • 4 garlic cloves
  • 0.5 tsp ground cloves
  • 2 tsp ground cumin
  • 2 tbsp lime juice
  • 1 tsp salt
  • 2 tbsp vegetable oil

Directions

Step 1
Heat the vegetable oil in a large skillet over medium-high heat.
Step 2
Sear the beef chuck roast on all sides until browned.
Step 3
In a blender, combine the minced garlic, chipotle peppers, beef broth, apple cider vinegar, lime juice, ground cumin, dried oregano, ground cloves, salt, and black pepper. Blend until smooth.

Place the seared beef in a slow cooker and pour the blended sauce over it.

Add the bay leaves to the slow cooker.

Cover and cook on low for 8 hours or until the beef is tender and can be easily shredded.

Remove the beef from the slow cooker and shred it using two forks.

Return the shredded beef to the slow cooker and mix it with the sauce. Let it cook for an additional 30 minutes to absorb the flavors.
