Ingredients

  • 4 slices bread
  • 2 tbsp butter
  • 0.5 cup cabbage
  • 0.5 cup carrot
  • 3 eggs
  • 2 green onions
  • 2 slices ham
  • 2 tbsp ketchup
  • 2 tbsp mayonnaise
  • 0.5 tsp pepper
  • 0.5 tsp salt
  • 1 tbsp sugar

Directions

Step 1
In a bowl, beat the eggs and season with salt and pepper.
Step 2
Add shredded cabbage, shredded carrot, and chopped green onions to the bowl and mix well.
Step 3
Heat a non-stick skillet over medium heat and add 1 tablespoon of butter.
Step 4
Pour the egg mixture into the skillet and spread evenly. Cook until the eggs are set and slightly browned on the bottom.
Step 5
Flip the egg mixture and cook the other side until fully set. Remove from the skillet and cut into two portions.
Step 6
In the same skillet, add the remaining butter and toast the bread slices until golden brown on both sides.
Step 7
Place a slice of ham on two pieces of toasted bread.
Step 8
Place the cooked egg mixture on top of the ham.
Step 9
Sprinkle sugar evenly over the egg mixture.
Step 10
Drizzle ketchup and mayonnaise over the top.
Step 11
Top with the remaining slices of toasted bread to form sandwiches.
Step 12
Cut the sandwiches in half and serve hot.
