A decadent and easy-to-make dessert that combines layers of graham crackers, creamy vanilla pudding, and rich chocolate ganache, mimicking the flavors of a classic chocolate éclair.

  • 24 sheets graham crackers
  • 204 grams instant vanilla pudding mix
  • 710 ml milk
  • 60 ml milk
  • 240 grams powdered sugar
  • 115 grams unsalted butter
  • 60 grams unsweetened cocoa powder
  • 5 ml vanilla extract
  • 480 ml whipped topping

Directions

Step 1
In a large bowl, whisk together the instant vanilla pudding mix and 710 ml of milk until thickened. Gently fold in the whipped topping.
Step 2
In a 9x13 inch baking dish, place a layer of graham crackers to cover the bottom.
Step 3
Spread half of the pudding mixture over the graham crackers. Add another layer of graham crackers on top.
Step 4
Spread the remaining pudding mixture over the second layer of graham crackers. Top with a final layer of graham crackers.
Step 5
In a medium saucepan, melt the butter over medium heat. Stir in the cocoa powder and powdered sugar. Add 60 ml of milk and vanilla extract, and whisk until smooth and well combined. Remove from heat and let cool slightly.
Step 6
Pour the chocolate mixture over the top layer of graham crackers, spreading it evenly.
Step 7
Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the layers to set.
