  • 500 g chicken breast
  • cilantro
  • 400 ml coconut milk
  • 3 garlic cloves
  • 1 tbsp ginger
  • 2 tbsp madras curry powder
  • 1 onion
  • 1 tsp salt
  • 200 g tomato puree
  • 2 tbsp vegetable oil

Directions

Step 1
Heat the vegetable oil in a large pan over medium heat.

Add the finely chopped onion and cook until translucent, about 5 minutes.

Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes.

Add the diced chicken breast and cook until browned on all sides, about 5-7 minutes.

Stir in the Madras curry powder and salt, ensuring the chicken is evenly coated.

Pour in the tomato puree and coconut milk, stirring well to combine.

Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.
