  • 0.5 tsp black pepper
  • 100 g cheddar cheese
  • 1 egg
  • 50 g flour
  • 2 green onions
  • 500 g mashed potatoes
  • 30 ml olive oil
  • 150 g panko breadcrumbs
  • 1 tsp salt

Directions

Step 1
In a large bowl, mix the mashed potatoes, egg, grated cheddar cheese, chopped green onions, salt, and black pepper until well combined.
Step 2
Shape the mixture into small patties, about 2 inches in diameter.
Step 3
Dredge each patty in flour, ensuring all sides are coated.
Step 4
Dip the floured patties into the egg wash and then coat with panko breadcrumbs, pressing lightly to adhere.
Step 5
Heat olive oil in a large skillet over medium heat.
Step 6
Fry the patties in batches until golden brown and crispy on both sides, about 3-4 minutes per side.
Step 7
Remove the patties from the skillet and drain on paper towels.
