Wash and clean the spinach thoroughly. In a large pan, melt 30g of butter over medium heat. Add the spinach and cook until wilted. Season with a pinch of salt and pepper. Set aside.

Prepare the hollandaise sauce by whisking the egg yolks and lemon juice together in a heatproof bowl. Place the bowl over a pot of simmering water, ensuring the bowl does not touch the water. Gradually add the remaining 30g of melted butter while whisking continuously until the sauce thickens. Season with salt and pepper and keep warm.
