Maja Blanca is a creamy and delicious coconut pudding that is a popular Filipino dessert. It is made from coconut milk, cornstarch, and sugar, topped with toasted coconut. This easy-to-make treat is perfect for any occasion.

Ingredients

  • 800 ml coconut milk
  • 120 g cornstarch
  • 375 ml evaporated milk
  • 200 g sugar
  • 425 g sweet corn kernel
  • 50 g toasted coconut flakes
  • 250 ml water

Directions

Step 1
In a large pot, combine coconut milk, evaporated milk, and sugar. Mix well.
Step 2
Add the sweet corn kernels and bring the mixture to a boil over medium heat.
Step 3
In a separate bowl, dissolve cornstarch in water until smooth.
Step 4
Slowly pour the cornstarch mixture into the boiling pot, stirring continuously to prevent lumps.
Step 5
Reduce heat to low and continue cooking, stirring constantly, until the mixture thickens to a pudding-like consistency.
Step 6
Pour the mixture into a greased 9x13 inch pan and spread evenly.
Step 7
Allow to cool and set at room temperature, then refrigerate for at least 1 hour.
Step 8
Before serving, sprinkle toasted coconut flakes on top for garnish.
