Ingredients

  • 2 cups cheddar cheese
  • 4 pieces chicken breast
  • 0.5 cup cilantro
  • 12 corn tortillas
  • 2 cloves garlic
  • 2 cups green salsa
  • 2 tablespoons olive oil
  • 1 onion
  • 1 teaspoon salt
  • 1 cup sour cream

Directions

Step 1
Preheat your oven to 375°F (190°C).
Step 2
In a large pot, boil the chicken breasts until fully cooked. Shred the cooked chicken and set aside.
Step 3
In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until translucent.
Step 4
In a large bowl, combine the shredded chicken, sautéed onions and garlic, sour cream, half of the cheddar cheese, and 1 cup of green salsa. Mix well.
Step 5
Warm the corn tortillas in a microwave or on a skillet to make them pliable.
Step 6
Fill each tortilla with a generous amount of the chicken mixture, then roll it up and place it seam-side down in a baking dish.
Step 7
Pour the remaining cup of green salsa over the rolled tortillas, then sprinkle the remaining cheddar cheese on top.
Step 8
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Step 9
Garnish with chopped cilantro before serving.
