Ingredients

  • 120 g breadcrumbs
  • 2 eggs
  • 60 g flour
  • 1 tsp garlic powder
  • 60 g parmesan cheese
  • 0.5 tsp pepper
  • 1 tsp salt
  • 2 zucchini

Directions

Step 1
Preheat your oven to 220°C (425°F). Line a baking sheet with parchment paper or lightly grease it.
Step 2
Cut the zucchinis into sticks, about the size of traditional fries.
Step 3
In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, salt, pepper, and garlic powder.

In a separate shallow dish, beat the eggs.
Step 5
Place the flour in a third shallow dish.
Step 6
Coat each zucchini stick in flour, then dip into the beaten eggs, and finally coat with the breadcrumb mixture.
Step 7
Place the coated zucchini sticks on the prepared baking sheet.
Step 8
Bake in the preheated oven for 20-25 minutes, or until the zucchini fries are golden and crispy.
