  • 400 grams all-purpose flour
  • 1 teaspoon baking soda
  • 200 grams brown sugar
  • 1 egg
  • 1 teaspoon ground allspice
  • 100 grams ground almonds
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 335 grams honey
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 100 grams powdered sugar
  • 2 tablespoons water

Directions

Step 1
In a medium saucepan, heat the honey and brown sugar over medium heat until the sugar is dissolved. Remove from heat and let cool slightly.
Step 2
In a large bowl, whisk together the egg, lemon zest, and lemon juice. Gradually add the cooled honey mixture and stir until combined.
Step 3
In a separate bowl, whisk together the flour, ground almonds, baking soda, cinnamon, cloves, allspice, and nutmeg.

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Cover the dough and refrigerate for at least 2 hours.

Preheat the oven to 180°C (350°F). Line baking sheets with parchment paper.

Roll out the dough on a lightly floured surface to about 1/4 inch thick. Use cookie cutters to cut out shapes and place them on the prepared baking sheets.

Bake for 8-10 minutes, or until the edges are lightly browned. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
Step 8
In a small bowl, mix the powdered sugar and water to create a glaze. Brush the glaze over the cooled cookies and let set before serving.
