A traditional German holiday cookie, Lebkuchen is a spiced treat often enjoyed during the festive season. This recipe yields deliciously soft and flavorful cookies that are perfect for sharing.

Step 1
In a medium saucepan, heat the honey and brown sugar over medium heat until the sugar is dissolved. Remove from heat and let cool slightly.

In a large bowl, whisk together the egg, lemon zest, and lemon juice. Gradually add the cooled honey mixture and stir until combined.

In a separate bowl, whisk together the flour, ground almonds, baking soda, cinnamon, cloves, allspice, and nutmeg.
