Pinakbet is a popular Filipino vegetable dish from the Ilocos region, made with a variety of vegetables, shrimp paste, and sometimes meat. It's a nutritious and flavorful dish that pairs well with steamed rice.
Directions
Step 1
In a large pan over medium heat, cook the pork belly until browned and the fat has rendered. Remove excess oil if necessary.

Add the minced garlic and sliced onions to the pan. Sauté until fragrant and the onions are translucent.

Stir in the shrimp paste and cook for another 2 minutes.

Add the tomatoes and cook until they start to soften.

Pour in the water and bring the mixture to a boil.

Add the squash and cook for about 5 minutes or until partially tender.

Add the eggplants, bitter melon, string beans, and okra. Stir to combine.

Season with salt and pepper to taste. Lower the heat and simmer until all the vegetables are cooked through but still slightly crisp.
Step 9
Serve the Pinakbet hot with steamed rice.
