Ingredients

  • 2 g black pepper
  • 60 g butter
  • 4 chicken breasts
  • 240 ml chicken broth
  • 2 eggs
  • 120 g flour
  • 60 ml lemon juice
  • 30 ml olive oil
  • 15 g parsley
  • 5 g salt
  • 120 ml white wine

Directions

Step 1
Season the chicken breasts with salt and pepper.
Step 2
Dredge the chicken in flour, shaking off any excess.
Step 3
Beat the eggs in a shallow dish. Dip the floured chicken into the eggs, coating completely.
Step 4
Heat the olive oil and half of the butter in a large skillet over medium heat.
Step 5
Add the chicken breasts to the skillet and cook until golden brown on each side, about 3-4 minutes per side. Remove chicken and set aside.
Step 6
Add the remaining butter, lemon juice, white wine, and chicken broth to the skillet. Stir to combine and bring to a simmer.
Step 7
Return the chicken breasts to the skillet and simmer until the sauce thickens slightly and the chicken is cooked through, about 5-7 minutes.
Step 8
Garnish with chopped parsley and serve immediately.
