Preheat your oven to 375°F (190°C).

Prepare the artichokes by trimming the stems and removing the tough outer leaves. Cut the top third of the artichoke and use a spoon to scoop out the fuzzy choke.

In a bowl, mix breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, lemon zest, salt, and black pepper.

Stuff each artichoke with the breadcrumb mixture, pressing it down between the leaves.

Place the stuffed artichokes in a baking dish and drizzle with olive oil and lemon juice.
