This classic dish features tender beef fillets wrapped in a buttery puff pastry with a savory mushroom duxelles and a hint of prosciutto. Perfect for special occasions or a gourmet dinner at home.

Step 1
Preheat the oven to 220°C (425°F).

Season the beef fillets with salt and pepper.

Heat the olive oil in a pan over medium-high heat. Sear the beef fillets for 1-2 minutes on each side until browned. Remove and let cool.

In the same pan, add the mushrooms, shallots, garlic, and thyme. Cook until the mixture is dry and the mushrooms are browned, about 10 minutes.

Lay out the prosciutto slices on a work surface. Spread the mushroom mixture evenly over the prosciutto.

Place each beef fillet on top of the mushroom mixture. Wrap the prosciutto around the fillet.

Roll out the puff pastry and cut into 4 equal squares. Place each wrapped fillet onto a square of pastry.

Brush the edges of the pastry with the beaten egg yolk. Fold the pastry over the fillet and seal the edges.

Place the wrapped fillets seam-side down on a baking sheet. Brush the tops with more egg yolk.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
