Ingredients

  • 1 tsp black pepper
  • 1.5 kg chicken
  • 400 ml coconut milk
  • 2 tbsp cooking oil
  • 2 tbsp fish sauce
  • 5 cloves garlic
  • 30 g ginger
  • 2 green chilies
  • 1 onion
  • 1 red bell pepper
  • 100 g spinach
  • 250 ml water

Directions

Step 1
Heat the cooking oil in a large pan over medium heat.
Step 2
Sauté the garlic, onion, and ginger until fragrant.
Step 3
Add the chicken pieces and cook until lightly browned.
Step 4
Pour in the fish sauce and stir to combine.
Step 5
Add the coconut milk and water, then bring to a boil.
Step 6
Reduce heat to low and simmer for 30 minutes, or until the chicken is tender.
Step 7
Add the green chilies and red bell pepper, and cook for another 5 minutes.
Step 8
Stir in the spinach and black pepper, and cook for an additional 2 minutes.
Step 9
Serve hot with steamed rice.
