Ingredients

  • 1200 ml beef broth
  • 0.5 tsp black pepper
  • 800 g canned diced tomatoes
  • 2 carrots
  • 2 celery stalks
  • 2 garlic cloves
  • 450 g Italian sausage
  • 1 tbsp Italian seasoning
  • 1 onion
  • 50 g parmesan cheese
  • 1 tsp salt
  • 100 g spinach leaves
  • 250 g tortellini

Directions

Step 1
In a large pot, cook the Italian sausage over medium heat until browned. Remove the sausage and set aside.
Step 2
In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.
Step 3
Add the beef broth, canned diced tomatoes, sliced carrots, sliced celery, and Italian seasoning. Bring to a boil.
Step 4
Reduce the heat and let the soup simmer for about 20 minutes, until the vegetables are tender.
Step 5
Add the cooked sausage back into the pot, along with the cheese tortellini. Cook for an additional 10 minutes.
Step 6
Stir in the fresh spinach leaves, salt, and black pepper. Let the soup cook for a few more minutes until the spinach is wilted.
Step 7
Serve the soup hot, topped with grated Parmesan cheese.
