Ingredients

  • 4 boiled potatoes
  • 4 bread slices
  • 2 chicken breasts
  • 500 ml chicken broth
  • 400 ml evaporated milk
  • 2 garlic cloves
  • 1 onion
  • 50 g parmesan cheese
  • 0.5 tsp pepper
  • 1 tsp salt
  • 2 tbsp vegetable oil
  • 50 g walnuts
  • 200 g white rice
  • 4 yellow aji peppers

Directions

Step 1
Boil the chicken breasts until fully cooked, then shred them into small pieces.
Step 2
In a blender, combine the yellow aji peppers, evaporated milk, bread slices, walnuts, and parmesan cheese. Blend until smooth.
Step 3
In a large pan, heat the vegetable oil over medium heat. Saute the chopped onion and minced garlic until golden brown.
Step 4
Pour the blended mixture into the pan and cook for a few minutes until it thickens.
Step 5
Add the chicken broth, shredded chicken, salt, and pepper. Stir well and simmer for about 10 minutes.
Step 6
Serve the Aji de Gallina over a bed of white rice and alongside boiled potatoes.
