Ingredients

  • 2 bay leaves
  • 2 carrots
  • 2 celery stalks
  • 1 chicken carcass
  • 3 garlic cloves
  • 1 onion
  • 10 peppercorns
  • 3 liters water

Directions

Step 1
Place the chicken carcass in a large pot.
Step 2
Add the carrots, celery, onion, and garlic cloves to the pot.
Step 3
Add the bay leaves and peppercorns to the pot.
Step 4
Pour water into the pot, ensuring all ingredients are submerged.
Step 5
Bring the water to a boil over medium-high heat.

Reduce the heat and let it simmer for 4 hours, skimming off any foam that forms on the surface.

After 4 hours, remove the pot from heat and let it cool slightly.
Step 8
Strain the stock through a fine mesh sieve into another pot or large bowl.

Discard the solids and let the stock cool completely.

Store the stock in airtight containers in the refrigerator or freezer.
