Ingredients

  • 0.5 tsp black pepper
  • 1 carrot
  • 1 celery stalk
  • 2 garlic cloves
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 onion
  • 200 grams red lentils
  • 1 tsp salt
  • 2 tbsp tomato paste
  • 1000 ml vegetable broth

Directions

Step 1
Rinse the red lentils under cold water until the water runs clear.
Step 2
In a large pot, heat the olive oil over medium heat. Add the onion, carrot, celery, and garlic. Sauté until the vegetables are tender, about 5-7 minutes.
Step 3
Stir in the tomato paste, ground cumin, and ground coriander. Cook for another 2 minutes.
Step 4
Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the lentils are soft.
Step 5
Season with salt, black pepper, and lemon juice. Adjust seasoning if needed.
Step 6
Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only a portion of the soup.
Step 7
Serve the soup hot, garnished with fresh herbs if desired.
