  • 1 bay leaf
  • 0.5 tsp black pepper
  • 2 carrot
  • 2 celery stalks
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 onion
  • 2 tbsp parsley
  • 1 tsp salt
  • 1 tsp thyme
  • 1.5 L vegetable broth
  • 450 g white beans

Directions

Step 1
Rinse and soak the white beans in water overnight.
Step 2
Drain and rinse the beans again before cooking.
Step 3
In a large pot, heat the olive oil over medium heat.

Add the chopped onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.

Add the minced garlic and cook for another 1-2 minutes.

Pour in the vegetable broth and add the soaked beans, bay leaf, dried thyme, salt, and pepper.

Bring the soup to a boil, then reduce the heat and let it simmer for about 1-1.5 hours, or until the beans are tender.
