  • 1 carrot
  • 1 cucumber
  • 50 g kombu seaweed
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp sesame seeds
  • 2 tbsp soy sauce
  • 1 tsp sugar

Directions

Step 1
Soak the kombu seaweed in water for 15-20 minutes until it softens. Drain and slice into thin strips.
Step 2
Peel and julienne the cucumber and carrot.
Step 3
In a small bowl, mix soy sauce, rice vinegar, sesame oil, and sugar until the sugar dissolves.
Step 4
In a large bowl, combine the kombu seaweed, cucumber, and carrot.
Step 5
Pour the dressing over the salad and toss to combine.

Sprinkle sesame seeds on top before serving.
