Ingredients

  • 1 teaspoon caraway seeds
  • 1 teaspoon cayenne pepper
  • 1 tablespoon coriander seeds
  • 1 tablespoon cumin seeds
  • 4 garlic cloves
  • 30 ml lemon juice
  • 60 ml olive oil
  • 4 red bell peppers
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika

Directions

Step 1
Preheat your oven to 450°F (230°C).
Step 2
Place the red bell peppers on a baking sheet and roast in the oven for about 30 minutes, or until the skins are blackened and blistered.
Step 3
Remove the peppers from the oven and place them in a bowl. Cover with plastic wrap and let them steam for about 15 minutes.
Step 4
Once the peppers are cool enough to handle, peel off the skins, remove the seeds, and discard the stems.
Step 5
In a dry skillet, toast the cumin seeds, coriander seeds, and caraway seeds over medium heat until fragrant, about 2-3 minutes. Let them cool, then grind them into a powder using a spice grinder or mortar and pestle.
Step 6
In a food processor, combine the roasted peppers, garlic cloves, ground spices, smoked paprika, cayenne pepper, olive oil, lemon juice, and salt. Process until smooth.
Step 7
Transfer the harissa sauce to a jar and store in the refrigerator. Use within two weeks.
