Directions
Step 1
Cut the pork butt roast into large chunks, about 3x3 inches.
Step 2
Season the pork chunks with salt and black pepper.
Step 3
Set the Instant Pot to 'Sauté' mode and add olive oil.
Step 4
Once hot, add the pork chunks and sear on all sides until browned, about 5 minutes per side.
Step 5
Add the garlic cloves and continue to sauté for another minute.
Step 6
Pour in the orange juice, scraping up any browned bits from the bottom of the pot.
Step 7
Close the lid and set the Instant Pot to 'Pressure Cook' on high for 60 minutes.
Step 8
Once done, allow the pressure to release naturally for 15 minutes, then manually release any remaining pressure.
Step 9
Remove the pork chunks and shred them with two forks.
Step 10
Optional: Spread the shredded pork on a baking sheet and broil in the oven for 5-10 minutes to get crispy edges.
Step 11
Serve the carnitas in tacos, burritos, or as a main dish with your favorite sides.
