Step 1
Combine raspberries, sugar, lemon juice, and water in a saucepan.

Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens, about 10 minutes.

Remove from heat and let it cool slightly.

Strain the mixture through a fine-mesh sieve into a bowl, pressing on the solids to extract as much liquid as possible.

Discard the solids and let the coulis cool completely before serving or storing in the refrigerator.
