Step 1
In a large bowl, whisk together the flour, baking powder, and salt.

In another bowl, beat the butter and sugar together until light and fluffy.

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract and orange juice.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough into two disks, wrap each in plastic wrap, and refrigerate for at least 1 hour.

Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper.

On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Cut out circles using a round cookie cutter or glass.

Place a teaspoon of your chosen filling in the center of each circle.

Fold the edges of the dough over the filling to form a triangle, pinching the corners to seal.
