Place the cauliflower, cucumber, green beans, carrot, and onion in a large bowl. Sprinkle with salt, mix well, and leave overnight.

The next day, rinse the vegetables well under cold water and drain thoroughly.

In a large pan, mix the sugar, vinegar, mustard powder, and turmeric. Bring to a boil, then reduce the heat and simmer for 5 minutes.

Add the vegetables to the pan and cook gently for about 10 minutes, stirring occasionally.

Mix the cornflour with a little cold water to make a smooth paste, then stir it into the pan. Continue to cook for another 5 minutes until the mixture thickens.
