Ingredients

  • 200 g carrot
  • 500 g cauliflower
  • 25 g cornflour
  • 250 g cucumber
  • 200 g green beans
  • 25 g mustard powder
  • 200 g onion
  • 50 g salt
  • 200 g sugar
  • 10 g turmeric
  • 600 ml white wine vinegar

Directions

Step 1
Place the cauliflower, cucumber, green beans, carrot, and onion in a large bowl. Sprinkle with salt, mix well, and leave overnight.
Step 2
The next day, rinse the vegetables well under cold water and drain thoroughly.
Step 3
In a large pan, mix the sugar, vinegar, mustard powder, and turmeric. Bring to a boil, then reduce the heat and simmer for 5 minutes.
Step 4
Add the vegetables to the pan and cook gently for about 10 minutes, stirring occasionally.
Step 5
Mix the cornflour with a little cold water to make a smooth paste, then stir it into the pan. Continue to cook for another 5 minutes until the mixture thickens.
Step 6
Spoon the piccalilli into sterilized jars, seal, and leave to cool. Store in a cool, dark place for at least a month before eating to allow the flavors to develop.
