Traditional Lancashire Hot Pot

A comforting and hearty British dish made with lamb, onions, and potatoes, perfect for a family meal.

Ingredients

  • 500 ml beef stock
  • 50 grams butter
  • 2 carrots
  • 900 grams lamb shoulder
  • 2 onions
  • 1 pinch pepper
  • 900 grams potatoes
  • 1 pinch salt
  • 2 sprigs thyme

Directions

Step 1
Preheat the oven to 170°C (325°F).
Step 2
In a large ovenproof dish, layer half of the sliced potatoes on the bottom.
Step 3
Add a layer of half the onions and carrots, followed by all the diced lamb.
Step 4
Season with salt, pepper, and add the thyme sprigs.
Step 5
Add the remaining onions and carrots, then top with the remaining potatoes.
Step 6
Pour the beef stock over the layers.
Step 7
Dot the top layer of potatoes with the butter.
Step 8
Cover the dish with a lid or foil and bake in the preheated oven for 1.5 hours.
Step 9
Remove the lid or foil and continue baking for another 30 minutes, or until the potatoes are golden and crispy.
Step 10
Remove from the oven and let it rest for a few minutes before serving.
