Pizzelle are classic Italian waffle cookies made using a special pizzelle iron. They are crisp, delicate, and delicious with a hint of anise flavor.

  • 1 tsp anise extract
  • 2 tsp baking powder
  • 115 g butter
  • 3 eggs
  • 250 g flour
  • 150 g sugar
  • 1 tsp vanilla extract

Directions

Step 1
Preheat the pizzelle iron according to the manufacturer's instructions.
Step 2
In a large bowl, beat the eggs and sugar together until light and fluffy.
Step 3
Add the melted butter, vanilla extract, and anise extract (if using), and mix well.
Step 4
In a separate bowl, sift together the flour and baking powder.
Step 5
Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
Step 6
Drop batter by the teaspoonful onto the center of the pizzelle iron, close the lid, and cook for about 30-45 seconds or until golden brown.
Step 7
Remove the pizzelle from the iron and cool on a wire rack. Repeat with remaining batter.
