Bara Brith, also known as 'speckled bread,' is a traditional Welsh fruit loaf made with tea-soaked dried fruits and spices. It's perfect for tea time or as a snack, served with a spread of butter.

Ingredients

  • 175 g brown sugar
  • 450 g dried mixed fruit
  • 1 egg
  • 2 tsp mixed spice
  • 250 g self-raising flour
  • 300 ml strong hot tea

Directions

Step 1
Place the dried mixed fruit in a bowl and pour over the hot tea. Cover and leave to soak overnight.
Step 2
Preheat your oven to 180°C (350°F) and grease and line a loaf tin.
Step 3
In a large bowl, mix together the flour, sugar, and mixed spice.
Step 4
Add the soaked fruit and tea mixture to the dry ingredients, followed by the beaten egg. Mix well until combined.
Step 5
Pour the mixture into the prepared loaf tin and smooth the top.
Step 6
Bake in the preheated oven for 1 hour, or until a skewer inserted into the center comes out clean.
Step 7
Allow to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
