Cheese Blintzes are a delightful treat, perfect for breakfast or dessert. These thin pancakes are filled with a creamy cheese mixture and can be topped with your favorite fruits or sauces.

Ingredients

  • 120 grams all-purpose flour
  • 2 tbsp butter
  • 240 grams cottage cheese
  • 120 grams cream cheese
  • 2 eggs
  • 240 ml milk
  • 0.5 tsp salt
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 2 tbsp vegetable oil
  • 60 ml water

Directions

Step 1
In a blender, combine the flour, milk, eggs, water, melted butter, and salt. Blend until smooth. Let the batter rest for 30 minutes.
Step 2
Heat a non-stick skillet over medium heat and lightly grease with vegetable oil. Pour 1/4 cup of batter into the skillet, tilting to spread evenly. Cook until the bottom is lightly browned, then flip and cook the other side. Repeat with remaining batter.
Step 3
In a bowl, mix the cottage cheese, cream cheese, sugar, and vanilla extract until smooth.
Step 4
Place a spoonful of the cheese mixture on each pancake and roll them up.
Step 5
Heat a bit of vegetable oil in a skillet over medium heat. Fry the blintzes until golden brown on all sides.
Step 6
Serve warm with your favorite toppings such as fruit, jam, or sour cream.
