Ingredients

  • 1 bay leaf
  • 0.5 tsp black pepper
  • 2 carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 500 g navy beans
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 1 tsp thyme
  • 1500 ml vegetable broth

Directions

Step 1
Rinse and soak the navy beans in water overnight.
Step 2
Drain and rinse the beans again before using.
Step 3
Heat the olive oil in a large pot over medium heat.
Step 4
Add the chopped onion, carrots, and celery. Cook until the vegetables are tender, about 5-7 minutes.

Stir in the minced garlic and cook for another minute.

Add the soaked navy beans, vegetable broth, bay leaf, dried thyme, salt, and black pepper to the pot.

Bring to a boil, then reduce the heat and let it simmer for about 1.5 hours, or until the beans are tender.
