This easy Caponata recipe is a traditional Sicilian dish made with eggplant, tomatoes, and various vegetables, creating a sweet and sour flavor. Perfect as an appetizer, side dish, or even a main course with bread.
Directions
Step 1
Heat olive oil in a large skillet over medium heat. Add the eggplant and cook until golden brown, about 10 minutes. Remove and set aside.

In the same skillet, add the onion, celery, and bell pepper. Cook until softened, about 5 minutes.

Add the garlic and cook for another minute until fragrant.

Stir in the diced tomatoes, tomato paste, red wine vinegar, and sugar. Bring to a simmer.
