Ingredients

  • 200 g bacon
  • 240 ml chicken broth
  • 15 g mustard
  • 1 onion
  • 15 g parsley
  • 1 g pepper
  • 1000 g potatoes
  • 5 g salt
  • 15 g sugar
  • 60 ml vinegar

Directions

Step 1
Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

Peel the potatoes and cut into slices.

In a large skillet, cook the bacon until crispy. Remove bacon, leaving the drippings in the skillet. Crumble the bacon and set aside.

Add chopped onion to the skillet and cook in the bacon drippings until softened.

Stir in vinegar, sugar, mustard, salt, and pepper. Cook over medium heat until the mixture is well blended.

Add chicken broth and allow the mixture to simmer for a few minutes.

Add the sliced potatoes to the skillet and gently stir to coat with the dressing.

Add the crumbled bacon and chopped parsley. Gently toss to combine.
