Step 1
Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

Peel the potatoes and cut into slices.

In a large skillet, cook the bacon until crispy. Remove bacon, leaving the drippings in the skillet. Crumble the bacon and set aside.

Add chopped onion to the skillet and cook in the bacon drippings until softened.
