A delicious and elegant dish featuring salmon fillets wrapped in puff pastry and baked to perfection. Ideal for special occasions or a fancy dinner at home.

Step 1
Preheat your oven to 200°C (400°F).

In a pan, melt the butter over medium heat and sauté the garlic until fragrant. Add the spinach and cook until wilted. Season with salt and pepper, then set aside to cool.

Roll out the puff pastry on a floured surface and cut it into four equal rectangles.

Spread a thin layer of Dijon mustard on each salmon fillet, then top with a spoonful of the sautéed spinach mixture and some lemon zest.

Place each salmon fillet on a rectangle of puff pastry. Fold the pastry over the salmon and seal the edges by pressing with a fork.

Brush the tops of the pastry with the beaten egg yolk for a golden finish.

Place the wrapped salmon fillets on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy.
