Ingredients

  • 450 g all-purpose flour
  • 7 g baking powder
  • 2 egg
  • 240 ml jam
  • 1 g salt
  • 200 g sugar
  • 225 g unsalted butter
  • 10 ml vanilla extract

Directions

Step 1
In a medium bowl, whisk together the flour, baking powder, and salt.
Step 2
In a large bowl, beat the butter and sugar together until light and fluffy.
Step 3
Add the eggs one at a time, beating well after each addition.
Step 4
Mix in the vanilla extract.
Step 5
Gradually add the flour mixture to the butter mixture, mixing until just combined.

Divide the dough in half, wrap each half in plastic wrap, and refrigerate for at least 1 hour.

Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
Step 8
On a lightly floured surface, roll out one portion of dough to about 1/4-inch thickness. Using a round cookie cutter, cut out circles.
Step 9
Place a teaspoon of jam in the center of each circle. Fold the edges of the circle to form a triangle, pinching the corners to seal.
Step 10
Place the cookies on the prepared baking sheets.
Step 11
Bake for 15-18 minutes or until the edges are golden brown. Allow to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
