  • 3 tablespoons lemon juice
  • 1 teaspoon salt
  • 4 cups whole milk

Pour the milk, cream, and salt into a saucepan.

Heat the mixture over medium heat, stirring occasionally, until it reaches 190°F (88°C).

Remove from heat and stir in the lemon juice.

Let the mixture sit for 5-10 minutes, until curds form.

Line a colander with cheesecloth and place it over a bowl.

Pour the mixture into the colander and let it drain for 1-2 hours, or until desired consistency is reached.

Transfer the ricotta to a container and refrigerate. It can be stored for up to 5 days.
