Preheat your oven to 375°F (190°C). Grease the insides of 4 ramekins with butter and dust with sugar, ensuring they are evenly coated.

Melt the dark chocolate and 1 tablespoon of butter in a heatproof bowl set over a pot of simmering water. Stir until smooth, then remove from heat and let cool slightly.

In a separate bowl, whisk the egg yolks with 50 grams of sugar until thick and pale. Gradually add the melted chocolate mixture and vanilla extract, and mix until well combined.

In a clean, dry bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the remaining 50 grams of sugar and salt, and continue beating until stiff peaks form.

Gently fold a third of the beaten egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites until just combined.
